The following recipes were submitted by 4-H members who participated in the 2007 4-H Quick Meals Contest. 

 

 

2007 Quick Meals – Desserts

Fruit Dip
(A family favorite recipe)
 
Yogurt
Low fat Cool Whip
 
Mix equal amounts of your favorite yogurt (we prefer Yoplait, strawberry flavored) with low fat cool whip. Mix together. Refrigerate until ready to use.

Fruity parfait
 
Vanilla yogurt
Variety of fruit (diced)
 
Layer vanilla yogurt with diced fruit in small bowl or cup

Fruit in a cloud
 
1 C diced bananas, grapes and oranges
½ C non fat Cool Whip
 
Mix and serve.

Fruit Cup
 
½ red apple
½ green apple
½ banana
½ kiwi
 
Wash and cut apples, cut out the seeds. Peel and chop banana and kiwi. Serve attractively on plate

Almond peach sundae
 
1 can (16 oz) sliced peaches in own juice
1 T cornstarch
½ t cinnamon
¼ t nutmeg
½ t almond extract
¼ C slivered almonds
Ice cream (optional)
 
Drain peaches and place liquid in saucepan. Stir in cornstarch, cinnamon, and nutmeg. Cook and stir over medium heat until thickened (about 2-3 minutes). Stir in extract, almonds, peaches and heat through. Serve with ice cream or alone.

Orange sea turtle
 
Peel an orange and break into halves. Then with one half break them into slices and place the slices for each fin and one long ways for the head.
 
Grape Fish
 
Take a grape and put a toothpick, with streamers on the end, into one end of the grape. Make sure that the other end of the toothpick isn’t poking through the other end.

Yogurt Fruit Dip
 
1 small strawberry yogurt
½ container (small) low fat Cool Whip
 
Mix ingredients and refrigerate until ready to serve.

Trifle
 
1 small angel food cake
2 cartons of tapioca pudding
1 can raspberry pie filling
 
Cut Angel food cake into 1 inch cubes. In 4 separate dishes layer pudding, raspberry filling and cake. Repeat until dish is filled. Put a dallop of whip cream on the top (if desired).
