Salads

 

The following recipes were submitted by 4-H members who participated in the 2007 4-H Quick Meals Contest. 

 

 

2007 Quick Meals – Salads

Oriental Chicken Salad
 
1 -10 oz can of fat free chicken
½ C Almonds
½ 16 oz bag of coleslaw mix
1 pkg. top Ramen noodles, crushed
 
Dressing:
1 flavor packet from Top Ramen noodles
2 T sugar
¼ C vegetable oil
3 T rice vinegar
1 T sesame oil
¼ t pepper
 
Mix chicken, almonds, coleslaw mix and noodles. Combine dressing ingredients and toss with salad just before serving.

Apple salad with pomegranate seeds
 
1 bag mixed salad greens
2 apples cut into 1 inch pieces
¼ pomegranate (seeded)
½ C parmesan
Fat free honey mustard dressing
 
Combine all ingredients, sprinkle with dressing to serve.
